Corn and Cashew Fritters / Vada

Ingredients :

Corn Kernels : 1 cup
Cashews : 1/2 cup
Rice Flour : 1 tbsp
Ginger Garlic Paste : 1/2 tsp
A few sprigs of coriander leaves
Red Chilli Powder to taste
Salt to taste
Oil for deep frying

Method :

Break the cashews into small pieces and set aside. Grind the fresh corn kernels into a coarse paste. Combine the cashew bits, corn paste, finely chopped coriander leaves, rice flour, salt, red chilli powder and ginger garlic paste in a wide bowl and mix well. Heat oil in a cooking pan for deep frying. Take lemon size ball of corn mixture, flatten them a little and deep fry them in hot oil till golden color on both sides evenly. Remove and place them on a tissue paper. Serve hot with tomato ketchup and a cup of Tea.
